Healthy Breakfast Tacos

Macros

Turkey and Egg: 23 protein / 34 carb / 11 fat

Turkey, Egg White, & Veggie Chorizo: 32 protein / 35 carb / 10 fat

 

Ingredients

  • 2 White Corn Tortilla
  • 2 oz 93% Lean Ground Turkey
  • 6 tbsp Egg whites or 1 whole egg
  • 30g Morning Star Veggie Chorizo (optional)
  • 30g black beans
  • 1 oz chopped white onion
  • 1 oz chopped green bell pepper
  • 1/2 slice 2% Kraft Singles
  • 1-2 tsp taco seasoning
  • Medium Pace Salsa
 
 
Directions

Step 1: Heat 1 medium and 1 small pan on the stove at medium heat and spray with cooking oil.

Step 2: Place 1 corn tortilla in the small pan and your taco base in the medium pan. Your taco base will be your ground turkey and veggie chorizo if you are adding that to your recipe.

Step 3: Chop onion and bell pepper and add to taco base. Check tortilla and flip to heat other side.

Step 4: Once the turkey meat looks fully cooked add black beans and salsa. Next, place your kraft singles on top of the taco base and let it melt. Add 1-2 teaspoons of taco seasoning. I add 1 tsp if I am using chorizo or 2 tsp is I am not using the chorizo because the chorizo is seasoned.

Step 5: Remove the first tortilla and add the second one to warm. Mix your taco base and add your egg. If I am using chorizo I use 6 tbsp of egg whites. If I am using just ground turkey I use 1 whole egg. You can use any combination of ingredients though. Some days I will use 1 whole egg and 3 tbsp of egg whites to add a little extra protein. I think of the fat in the veggie chorizo as a replacement for the egg yolk.

Step 6: Flip your 2nd tortilla and let your taco base sit cooking in the pan until your tortilla is ready. Stir the taco base when necessary.

Step 7: Once both of your tortillas are on your plate, evenly distribute the taco base into each tortilla.

Step 8: Enjoy!

 

Ways to change the macros for this recipe: 

Less carbs: Omit the black beans.

Less fat: Use 99% lean ground turkey, use egg whites, omit veggie chorizo.

More protein: Add more egg whites and/or more ground turkey.
